Cranberry Walnut Bread

Test your baking skills with this melt-in-your-mouth cranberry walnut bread. The tang and crunch of this sweet loaf strikes the taste buds with seasonal flavors. Bonus: the cranberries and oranges pack this dish with phytonutrient power!

Cranberry Walnut Bread

Prep time: 15 minutes     Cook time: 55 minutes     Serves: 8 servings

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • ¾ cup orange juice
  • 2 TBSP grated orange zest
  • 1 TSBP canola oil
  • 1 egg, beaten (or flax egg)
  • 1 ½ cup fresh cranberries, chopped
  • ½ cup walnuts, chopped

Directions:

  1. Preheat oven to 350 F. Lightly coat a 9 x 5-inch loaf pan with nonstick cooking spray or coconut oil.
  2. In a medium bowl, mix together flours, sugar, baking powder, salt and baking soda.
  3. Stir in orange juice, orange zest, oil and egg. Mix until blended. Stir in cranberries and nuts. Spread evenly in loaf pan.
  4. Bake for 55 minutes, or until a fork inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely before eating.
